Tried out this recipe the other night and rather enjoyed it. Today, I’m sharing how I made it.
Hardware
- Knife, for the chicken and onion
- Electric pressure cooker, with saute/stovetop function
- Stirring Spoon
Ingredients
- 1 medium onion
- ~1lb of chicken, I like thighs for this
- 2lb bag of frozen veg mix
- ~1Tbsp garlic
- 1/2 stick of butter
- 1 can cream of chicken soup
- 1 box chicken stock
- poultry seasoning
- pepper
- salt
Procedure
- Put butter in to cooker and turn on to high
- While the pot is preheating, chunk up the onion and chicken to desired size.
- Put onion, chicken, garlic and seasonings into pot with butter; cook until chicken is looking… cooked.
- Turn off pot, add stock and veg mix, stir.
- Layer noodles on top, in an even layer. No stirring here.
- Pressure cook on high for 8 minutes.
- Natural release for 5 minutes, then quick release.
- Add cream of chicken soup and stir.
- Enjoy!
Makes for a simplish meal, great for cold winter days. Even better as leftovers! Original recipe sourced from IDon’tHaveTimeForThat. I recommend checking the comments there for other modifications and such.
Till next time!
