Writing about a recipe that my Dad came up with when I was really young and still eat today, modified just the way I like it!
Hardware
- Can opener
- 13x9 pan, I’ve got a glass one, but metal should work fine.
Ingredents
- 8 pack of frozen burritos. El Monterey Beef and Bean are what I feel work best.
- 1 can chili, I think it’s 25 ounces(?) so one of the big ones, but not one of the massive cans.
- 1 can enchilada sauce
- Cheddar chess, enough to top the pan
Procedure
- Place frozen burritos into the pan. All eight can fit if you turn two sideways and place them close to the edge of the pan.
- Chili on top of those, spread evenly. Enchilada sauce is next, also evenly.
- Top with cheese.
- Cook in oven preheated to 375° for 34 minutes.
- Enjoy!
Quick, simple. Just the way I like it. Really great for those nights when you get home from work an don’t want to cook.
